The Dummies Guide to Leftovers is something that I am sure that everyone can use. This collaborative project involves many bloggers sharing their favorite recipes involving leftovers.
One of my favorite things after every holiday meal has got to be the leftovers. This recipe is something that was shared with my father almost 20 years ago and we have made it numerous times every year without fail.
This recipe is something that my family has made for years and in fact, we even make extra food every year so we have a lot of casserole. I cannot remember a year when we have not made Turkey Casserole.
I went shopping with my family at Walmart for the additional ingredients needed. So here is my family’s recipe:
1 Jar of Gravy – I like to use a little extra gravy for a creamier recipe
Boil the egg noodles until they are completely done. Use Wesson Oil to make certain that the noodles do not stick together. Drain and put into saucepan.
Cut up the stuffing into small chunks and spray each chunk with Parkay to prevent drying out when baking.
Pick the turkey off of the carcass and shred. Place stuffing, turkey and gravy into saucepan with noodles.
Heat until warm. Place everything into baking dish generously sprayed with PAM.
Top with breadcrumbs, if desired. If you do use breadcrumbs, spray entire casserole with PAM to prevent drying in oven.
Bake casserole for about 45-50 minutes at 350 degrees. Let stand 10-15 before serving. This helps to thicken up the gravy and really makes a hearty meal.
