#ALDI Summer Salad with Watermelon, Mango & Feta Cheese

Nothing says Summer to me quite like a salad. I love the fresh greens and the fresh fruit available as soon as the weather starts to warm.

I love to start each meal with a salad and in fact, I sometimes make a salad my entire meal.

This is one of our favorite salads which combines a favorite from everyone in my family. My son could eat his weight in watermelon and my middle daughter absolutely loves mango. My youngest is always sneaking the candied pecans and my favorite is the Feta cheese. My husband loves Raspberry vinaigrette on any salad that he eats.

Here is one of our favorite, summertime salads:

Watermelon & Mango Salad with Feta Cheese

INGREDIENTS NEEDED (all items were purchased at ALDI, and produce prices may vary slightly by location):

Watermelon, cubed 1 inch ($3.99 each)
Mango, sliced thin ($.29 each)
Mixed Field Greens ($2.99 for the container)
Raspberry vinaigrette ($1.99 for the bottle)
Feta Cheese ($1.99 for the container)
Candied Pecans ($3.49)

TO MAKE CANDIED PECANS

1.

In a saucepot heat 4 cups of water with 2 cups sugar.

2.

Bring to boil, add pecans and cook for about 10 minutes.

NOTE: The pecans are done when you can break them open and they are no longer white in the middle.

Drain pecans from liquid and place on a lined sheet pan.

4.

Bake at 275 for about 20-30 min, or until pecans are no longer tacky to touch.

TO MAKE THE SALAD

Toss the field greens with the raspberry vinaigrette and place on a plate. Each salad should have about two generous cups of lettuce.

Add about one cup of fruit. Sprinkle with candied pecans and feta cheese.
